Welcome to our series “More than Meets the Eye,” where we delve into the lives of Strayer University students and examine all of the facets of their extraordinary lives.

In this installment, we meet Simone. You may see her as a wife and mother at first glance, but you’ll soon learn there’s much more to her. On top of a full-time job in finance, plus modeling and coordinating fashion shows, she’s also an entrepreneur creating something quite delicious. She once had no plans on going back to school but the desire to earn her degree sparked after having her second daughter. She sought to become an inspiration to her children.
